Chicken Taco Soup
1 small onion, chopped
1 tbsp olive oil
4 c chicken broth
1 can whole kernel corn
1 can tomato sauce
2-3 c water
3 chicken breasts (pulled)
1 packet taco seasoning
Cayenne pepper to taste
1. Saute onions in oil until soft.
2. Add broth, water, tomato sauce, corn, taco seasoning, and cayenne. Bring to boil and add chicken. Reduce heat, cover, and simmer for an hour.
3. Serve with tortilla strips and sour cream/Greek yogurt.
Makes approx: 8 1-cup servings @ 170 calories each.
